Pumpkin Log Recipe

Pumpkin Mixture

Mix the following 3 ingredients together until smooth:

  • 3 eggs
  • 1 cup sugar
  • 2/3 cup canned pumpkin

Add the following to pumpkin mixture:
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1/2 tsp. cinnamon
  • 3/4 cup flour

Spray a cookie sheet with pam and line with wax paper. Spread the pumpkin mixture evenly onto wax paper.

Bake at 350 for 15 minutes.

Lay out a smooth tea towel and sprinkle towel with powdered sugar.

Flip cake onto towel and peel off wax paper.

Sprinkle top of cake with powdered sugar.

Roll cake up lengthwise into the towel and let cool.

While cake is cooling, make the filling.

Filling

  • 8 oz cream cheese
  • 2 Tbls. butter
  • 1 tsp vanilla
  • 1 cup powdered sugar

Beat the following the cream cheese and butter together until smooth.  Then, add 1 tsp vanilla and 1 cup powdered sugar. Beat again until smooth.

When cake is cooled, unroll and spread filling evenly over cake. Roll up the log again lengthwise, not in the towel this time. Pumpkin log can be frozen or put in the fridge.
